Our Story
In 2019, I left a career in tech because something felt missing. It wasn’t just personal. It was a growing disconnect between people and real, nourishing food. That feeling led me to apprentice on a regenerative livestock farm, where I witnessed a food system that honored the whole animal. Every part had a purpose. Hides were tanned to make leather, bones became broth, and fats were rendered into tallow and lard - nothing was wasted. That experience reconnected me to an insight from my own heritage about nourishment, culture, and responsibility.
When I returned to New York in 2021, I spoke with dozens of farmers and heard the same story over and over. They struggled to sell bones, fats, and organ meats. These are some of the most nutrient-dense parts of the animal, and they were being overlooked. In fact, our food system discards up to half the animal harvest.
Yet these cuts are the most prized in many cultures for their taste and nutrition. Drawing from my Korean heritage, I began buying bones from local farmers and cooking the broth I grew up on. People lined up not only for the flavor but for how the broth made them feel: grounded, nourished, and restored. It consistently sold out at farmers markets and pop-ups across NYC. Many hundreds of gallons of broth later, Reclamation Foods was born.
Today, our award-winning Korean-style bone broth is available in shelf-stable jars. It's the first in what we hope to be a growing collection of whole-animal, nutrient-dense foods that celebrate culture and nourish our bodies. Everything we do is about reclaiming traditional culinary wisdom, honoring the animals we harvest, and rediscovering nourishment through real food.
