A cup of Korean-style bone broth topped with scallions

Seoul Chaser: A Classic Sipping Broth for Any Occasion

The original "hug in a mug"—deeply savory, subtly complex, and endlessly customizable. Start with a steaming pour of Reclamation bone broth, grass-fed beef or pasture-raised pork, season it just right with sea salt, then add toppings to fit your mood: scallions for freshness, garlic and ginger for a little medicinal kick, or a sprinkle of gochugaru (Korean red pepper flakes) if you're chasing heat. It's a warming ritual that's as simple as it is satisfying, whether you're cozying up solo or pouring mugs for friends.

Makes one 8-oz beverage

Ingredients

Optional Toppings

  • 1 tsp sliced scallions
  • 1/2 tsp minced garlic
  • 1/2 tsp minced ginger
  • Pinch of gochugaru (Korean red pepper flakes)
  • Use any combination of the above, or experiment with your own favorites

Method

  1. Warm the bone broth to a simmer in a small saucepan over medium heat, or in the microwave for 1-2 minutes until steaming.
  2. Add sea salt to a mug.
  3. Layer in any toppings you like—scallions, garlic, ginger, gochugaru, or a mix.
  4. Pour the hot broth into the mug, stir well, and adjust salt to taste. Sip slowly to savor pure, personalized comfort.

Serving Notes

  • Pair it with a handful of rice crackers for a light snack.
  • Take sips in between bites of kimbap for a comforting lunch.
  • Add a side of kimchi for a hit of brightness and crunch.
  • Sip it as a morning wake-up in place of coffee, or as an afternoon reset between meals.
  • Keep it plain and simple for a nourishing nightcap.
